Feast of Love 3: Chicken Stew and Chocolate Pudding


I've never been a fan of holidays that call for the grand gesture, because no matter how grand you make it, there's always someone who does it better. I've lived many a Valentine's Day feeling like a failure — either because I was without anyone, or had to explain why I don't do the grand gestures.

So when I came across this site on facebook today, I knew I'd found my February 14th holiday. Generosity Day. Generosity Day is for everyone, not just for couples, and it's about sharing love and kindness. I can get behind that.

But still, one has to eat, non? And what says love more than food? Nothing to me anyway.




 
I've been craving a stew for some time now, and Hubby, bless his heart, chose to have a chicken stew (probably to please me too, he's just that sweet).

There is no  real recipe for how I make stew. I simply softened the onions, garlic, sweet potato and then added the chicken, 3 cups of broth, and a cup of wine, plus a lot of veggies. I thickened it with some almond meal, but next time will try arrowroot powder. Delish!

Way back when we were first starting the juicing cleanse I found this recipe for Chocolate Pudding and knew I would be making it for Hubby. It is surprisingly good for such an unusual combination of ingredients, but I've made some adjustments to the original by Jon Gabriel. The chia seeds, which act as a thickener, don't dissolve, so I would grind them up, and I amped up the cacao powder and sugar just a bit.



Chocolate Chia Mousse
Adapted from a Jon Gabriel low glycemic recipe. Despite it’s unusual ingredients, this is actually very smooth and tasty.
Makes 4 servings
2                                                 avocados, ripe
8 tbsp                                        coconut palm sugar
7 tbsp                                        raw cacao
2 tbsp                                        whey protein (or hemp protein) powder
2 tbsp                                        chia seeds, ground
1/2 tsp                                      vanilla extract
1-1/2 cups                                coconut water (I used coconut almond milk)

Put all ingredients into a blender. Start with 1 cup coconut almond milk; adding more if needed to make smooth consistency.
Spoon into glasses and refrigerate for an hour to set.

We also had a glass of white wine with dinner for our special occasion. I can feel a wee bit of a headache. It will be interesting to see if Hubby's sugar goes way up from the wine and the coconut palm sugar (which is low glycemic).

Best part, we get to do this meal all over again (sans wine) tomorrow!
